Italian to English translations [PRO] Science - Agriculture / olives | | Italian term or phrase: indice di invaiatura | the term véraison seems to be used exclusively for the invaiatura of grapes, and its difficult to get an elegant sound out of "turning colour" and "index". There must be a term in olive cultures, but I cannot find it.

If you have "index" in your term, this implies a scale so you don't need to mention "change" explicity ;-)
"Veraison" is not possible since, apart from the fact that it is used almost exclusively for grapes in English, it refers to the moment when the berries acquire colour, and not to the process of colour change as a whole.
"Ripeness" is too general a concept and in any case is usually measured against other parameters, such as sugar content, but not skin colour.

Both terms are used in olive- as well as grape-growing, as already guessed by you and Marco.
