I fagioli XXX, dal colore bianco e involucro sottile, sono semi grandi o molto grandi, con lunghezza non inferiore a 18 mm e larghezza non inferiore a 10 mm. Il loro odore è naturale e caratteristico, non sono farinosi e *tengono bene la cottura*.

even when overcooked... which doesn't mean they never get overcooked: everything gets overcooked... when it's overcooked; but some things desintegrate, while others still keep their shapes.

  -> Yes, because it gives the idea that under no circumstances they'll get overcooked, even when you leave them on fire for some extra time. That's what I meant to say. But , you're right, it may be omitted. :)
