Elaiotecnica is a generic term covering any technology involving vegetable oils, whether in the field of food technology (sic), paint technology, fuel technology or whatever. In the 'food technology' subdivision of 'elaiotecnica' you will find people dealing not just with olive oil but also sunflower and maize oils, to name just two.

From the context we have, it's possible the course includes references to other vegetable oils, so jumping straight to olive oil in the title could be entirely inappropriate.

While thanking both posters for their contributions, on consulting references, they are all about technology (use for fuel, in paint industry etc) and oil, whereas this is about the production & food side of olives, rather less technological. Perhaps 'olive oil and olive product technology'?
