But how are the terms 'fruizione' and 'Fruire', the active process of taking in the art as opposed to passively 'viewing', translated?

Explanation:
in this case, as you said, 'fruire' is not just passively 'view'..so I think 'to be experienced' or 'to be perceived' would suit.
