Explanation:
I agree with Stefina that it would be the noun from 'desumere' - to deduce - which I read here as meaning that they used traditional practices as a source from which to develop new ideas (desunzione dalla tradizione di un tema nuovo...=developing a new theme from traditional practices)

The sentence would read something like, "...the recapitulation of the tradition of a modeled or painted theme had become established practice..."
