retention or storage (depending on context)

Explanation:
retention
A noun
1 retention, keeping, holding

the act of keeping in your possession

However, depending on who the certificate is issued to and the context of the phrase, I would suggest simply using the term storage.

possession

Explanation:
I know that "detenzione d'arme" is possession of firearms so the same must hold for fresh food I suppose

Reconsidering: this has to be a shop. Shops "stock" goods. Therefore stock is a probably much more appropriate term.
