Italian to English translations [PRO]
Construction / Civil Engineering / opere di uso civile
Italian term or phrase: palmento
Part of a list falling under the above heading together with:

cantina, carcere, camera dello scirocco, colombaia, cripta, criptoportico, frantoio, fungaia, galleria ferroviaria, polveriera,

De Mauro definition:

vasca larga e poco profonda dalle pareti in mattoni o calcestruzzo, usata in Meridione per la pigiatura e la fermentazione dei mosti
2 ciascuna delle macine di un mulino ad acqua: macinare il grano a due, a quattro palmenti | estens., locale in cui sono collocate le macine o altri attrezzi per macinare

Could refer to either of the above - however I can't find an adequate English (UK) equivalent. Any suggestions much appreciated...

wine making plant
Explanation:
Nel meridione il palmento è tutto l'impianto e il locale per fare il vino (con pace a De Mauro) e comprende sia le vasche di raccolta delle uve che le macine che le vasche di sedimentazione e prima fermentazione. Rimene vuoto e inattivo per gran parte dell'anno.

(grape) crushing and fermenting vat

Explanation:
It's just a try.
I hope it works for the text you are translating.
However Caterina is right in suggesting 'wine press' for the second referent which is also the most common meaning for the 'palmento' .

agree  Umberto Cassano: d'accordo, è in assoluto l'accezione più comune. Ero molto perplesso quando ho fornito la mia soluzione traduttiva. I palmenti sono molto comuni nei trulli della Valle d'Itria e un po' in tutta la Puglia, realtà che conosco meglio.
