English translation:striking of the [formwork for the] concrete castings
Explanation:
The Italian is written very carelessly, but this is what the writer means. "Striking" is the standard technical term for removing the timber or steel formwork into which concrete is poured, after the concrete has set.

The misnomer "concrete formwork" suggests that there is such a thing as formwork made from concrete (there isn't).
