neutral  AeC2009: Traduzione linguisticamente corretta, ma inaccettabile dal punto di vista gastronomico. Non puoi chiamare "pancetta" un Pata Negra, è un insulto..., :-))) (ovviamente è un commento scherzoso...)

  -> I quite agree that this is a definate limitation of the English language, and that the noble Pata Negra should never be classified this way, however, until this egregious shortcoming in English is rectified, we have few other options.... :)

un'alternativa.
"mignon" non si usa solo per Fillet mignon, ma si può dire Beef Burger mignon, ecc.

Se il testo è rivolto ai professionisti, o è sul menù di un ristorante di alta cucina, magari ci potrebbe stare.

Quindi Guanciale, se per gli operatori del settore culinario o per intenditori, rimane sempre Guanciale anche in inglese.
Altrimenti, certo, non credo sia proprio raccomandabile... :-)
