Italian term or phrase: corsi a catalogo
Can't say I've come across this before so unsure how best to translate. Related terms are 'formazione a catalogo' and 'corsi di formazione a catalogo'. They seem to be one/two day courses.

This is taken form the Chamber of Commerce of Pavia:

Corsi a catalogo

Some other definitions:

Formazione a catalogo

English translation:workshops / trainings / seminars
Explanation:
Based on what I'm reading, they sound like what I would call workshops or trainings. Like a Trados training for instance. Some of the trainings on the website I'm referencing for instance are 2-3 day trainings, some might be only one.

mix-and-match courses

Explanation:
I get the impression participants choose modules from the catalogue to vreate theri own training programme, so something like this might work.

off-the-peg courses

Explanation:
I assume these are ready made courses, rather than customised and that the "definition" really tells you more about the courses rather than defining "a catalogo". Course I could be barking up the famous wrong tree.
A Google shows it is in fact used, so I posted.

standard courses

Explanation:
standard courses or standard training

I'd say they are courses that can be chosen from a catalogue, ie always available - standard, rather than personalised, so this solution might work

Since they are actually all short courses which are specific about a subject and which can be used for ongoing or a one-off training session, they could be defined as "training modules" or "standard training modules", literally also "standard short courses" but I think "training modules" could be more relevant
