I can just say that several of the stalls at at least one of my local farmers' markets in the UK are rather more than 0 km (e.g. 50 - 100 miles) ;-)

Il concetto di km0 è "solo" di dare il prodotto finito direttamente al cliente; questo in particolare per l'agricoltura.
Ad esempio: mangiare in Sicilia le arance siciliane e a Roma quelle prodotte nel Lazio. Questo abbatte i costi di trasporto i l'inquinamente che ne deriva. Certo se volete del salmone norvegese in Sicilia...il concetto "km0" non esiste :).
In Francia, si dice "direttamente dal produttore al consomatore".

Ma si tratta di non consumare in logistica del tutto o anche di compensare con altro? (ad esempio piantando alberi?) Ci vorrebbe qualche indizio in più sul contesto, grazie.

You forgot to give any context, but yes, we have had this before. I can't find it by doing a term search, but it meant locally sourced cuisine. Does that fit the bill?

il concetto di km 0 si riferisce al fatto che il bene è prodotto localmente
è spesso collegato al concetto di "filiera corta" (dal produttore al consumatore, come dice Lionel nei commenti), ma i due concetti non coincidono
km 0 si riferisce a "quanto vicino" avviene la produzione (es. ciliegie coltivate dal contadino vicino a casa mia...), mentre filiera corta si riferisce agli intermediari che (non ) ci sono tra chi produce e chi compra (es. se io compro quelle ciliegie direttamente dal mio contadino, ho km 0 + filiera corta, mentre se il contadino le vende a un distributore, che a sua volta le vende al negozio di alimentari del mio paese, magari ho ancora (?) il km 0, ma non ho + la filiera corta perché le ciliegie sono passate per altri 2 intermediari)

non mi venivano in mente esempi migliori... spero di essere stata... chiara :-)

per la traduzione lascio ai madrelingua, anche se mi orienterei su zero-mile / locally produced...
