No doubt as to what this dish is.. (apart from the alla Vittoria bit, actually). Will probably leave it in Italian and include an explanation in brackets. Any ideas for a nice, possibly appetising way to put this?

agree  Michael Korovkin: In your client's place I'd leave it out altogether: anglophones perceive eating horse with no less disgust than the Italians – eating dogmeat! And a tiny little foal to boot!Alla Victoria – to add insult to injury!

Explanation:
Anche questo è solo un suggerimento..., inoltre in cucina il Francese "fa fine e non impegna" (anche se, secondo me, la cucina francese è cattiva letteratura rispetto a quella italiana, ma questo è un altro argomento...)
