prosciutto prodotto con la particolare forma a triangolo – a violoncello, come viene detto in Umbria – invece che a mezzaluna, dovuta all'ampia scotennatura della parte interna della coscia, con un profondo taglio a V che arriva quasi fino all'osso. Infatti, seguendo un' antica usanza, i norcini tagliano I CAPI CORTI SOTTO L'ANCHETTA, lasciando la coscia più scoperta, con uno strato di cotenna più sottile. Questo taglio, che lascia molta carne viva, influisce sul periodo di stagionatura e sulla penetrazione degli aromi nella carne.
