don't think you need "rump" as that is where ham is from

"deboned" or "off the bone" can be added

in fact the making of this sounds like you could leave it as venison prosciutto

the fact that this is spiced and salted and dried makes it look more like prosciutto (so you may want to say "Parma ham style") although the problem is lack of fat on deer meat and the amount of parasites that are present...

"... Ok, prosciutto with farm raised animals -yes- you can eliminate most parasites from the muscle tissue but wild killed ... the multitude of parasite eggs will persist for years in stasis with dry, salt curing - unless you subject it to a final kill step like cold pasteurization.

Almost all wild meat will lack the fat for the melt in the mouth texture of prosciutto though so its not really the proper term

I would like to try my hand at making a venison prosciutto; I had some when I was in Italy and it was better than a ham prosciutto!
