Food & Dairy / Olive oil
Italian term or phrase: ventaglio olfattivo di grande intensità
It reads: Ventaglio olfattivo di grande intensità. Erbe aromatiche e note balsamiche di salvia. Finale speziato. La bocca è complessa, piacevolmente amara con netto richiamo di peperoncino. I have given what follows the phrase so as to give it more context.

This is for a review on Italian olive oils for restaurant owners in Italy. Each oil has its own short description, in what I term 'olive-oil' speak!

complex and intense aroma
Explanation:
I used "complex" for "ventaglio", which implies that it contains a range of notes or fragrances.

A bouquet/nose of great intensity

Explanation:
I think olive oil speak is similar to wine speak in the type of language used.

According to the ISO standard, bouquet is
“a set of specific olfactory perceptions (traits) providing for some strong alcoholic
drink to be described or characterized”. However, the definition formulated by
famous Peynaud seems to be more appropriate: “Bouquet is a complex and
exuberant smell developed as a result of certain enzymatic and thermal chemical
reactions taking place on primary, secondary, tertiary and quaternary aromatics in
drinks throughout a longer period of alcoholic drink maturing”.
According to the development level, the smell of plum brandies Sljivovica
can be: neutral (anemic), weakly expressed, modest, new (fresh), expressed
(developed or mature), intensive, luxurious, aggressive (perfume-like), old,
plating-like old (noble), and obsolete (degraded).
