The whole sentence reads: Olio di grande intensità olfattiva con riconoscimenti vegetali, di erba tagliata e carciofo. L'esame gustativo è persistente e strutturato con un finale speziato di pepe nero. I have considered using 'reminiscences rich with vegetable notes of freshly-mown grass and artichoke'.

This is a description of a particular olive oil for a review for restaurant-owners in Italy. Many thanks for any suggestions. Jane
