Italian term or phrase: battella al coltello di carne Fassone
This is for a website on Italian olive oils. There is usually a description of the oil followed by the ideal accompaniment. I cannot find any sources for the above dish in English although have read desriptions of what it is in Italian. I know that the Italian is often acceptable nowadays when it comes to recipes etc but this one would not be recognizable, I think.

The full sentence after the description of the oil read simply: ottimo con battella al coltello di carne Fassone

Fassone o "fascione" è la denominazione usata dagli addetti per i tutti bovini caratterizzati da masse muscolari ipertrofiche, di particolare pregio per l'alta resa al macello, riprendendo la denominazione usata tradizionalmente dagli allevatori per la Piemontese, razza bovina autoctona del Piemonte. In Piemonte il fassone era profondamente legato alla vita e alle tradizioni contadine di molte comunità piemontesi grazie alla triplice attitudine della razza, in grado di fornire carne, latte e forza lavoro.


Gli allevamenti di fassone piemontese sono fatti risalire agli inizi del 1800, periodo al quale risale la distinzione in due categorie, cioè:

1.Ordinaria collinare destinata prevalentemente all'impiego in attività lavorative e alla produzione di latte per l'allevamento dei vitelli; essa era allevata nelle Langhe, nelle zone collinari di Chieri, Moncalieri, Santena e nel Canavese.
2.Scelta di pianura dotata di caratteristiche simili alla precedente, per la pregevolezza della carne il suo allevamento era finalizzato alla produzione di latte e alla macellazione; diffusa prevalentemente nelle pianure alla destra del fiume Po.
