Italian to English translations [PRO] Food & Dairy / Kitchen training | | Italian term or phrase: Scalzare | This is from a list of subjects covered in professional training for working in a restaurant. Can't find the translation anywhere. The only context I have is "Scalzare agnello" (i.e. how to...).

It is the most complicated thing you can do with lamb that I can think of, and certainly required in serious restaurants.

Am fairly sure this is it now -- 'French-cutting' is about 'cleaning' the scrag ends of meat and fat for tidy presentation, most relevant for a rack of lamb. |
