Italian term or phrase: in affiancamento
It's rather simple: it is what happens when a newly hired is paired with a more experienced worker/employee, in this case however it's not just the buddy system as the "other" is also the one who provided theoretical training. I thought "coaching" might do but it is mainly used for lifestyle coaching and things like that:
"durante il periodo di formazione / addestramento il neo assunto verrà fornito dei previsti DPI e potrà operare sul campo solo in affiancamento ad un tutor (lo stesso soggetto incaricato alle attività di addestramento), sino al termine delle attività, ovvero al raggiungimento degli obiettivi di qualifica;"

No the learner shadows the the expert. It is learning by imitation. The idea is that the learner follows like a shadow, although it obviously isn't always precisely like that. Basically, you go with him he knows the ropes.
