I don't think "ruralist" is a very well-known term in English, so it would be better to just try something else that captures the meaning. I like "professional tourists" because connotes the efficiency and expertise implied in the source text in a way immediately recognizable to English speakers, and it also maintains the humorous or slightly critical sense of the source term.

Explanation:
that is what it sounds like to me - low conf., as not really sure

As seasoned Venice travellers (one four day stay and we know everything) we decided that a solo visit was required. Our first venture saw us dive onto the shuttle boat and off at St Marks's and into the crowds. Ah the joys of walking around the narrow streets with thousands of tourists (note we are now travellers not your common or garden tourists).

Explanation:
A "ruralista" could be defined as someone who is not an ecologist but follows a new post-enviromentalist movement.
This people enjoy contact with nature, clean and healty, but more than everything, "right" food (no monocultures, pesticides, etc) and so on. In short, They refer to ancient farmer's pride and organize their trips/holidays accordingly.

And there are so many beautiful places in Venice to enjoy, being a ruralista. ;)
