Explanation:
I would automatically go for collectibility here on two grounds. One esigere is to demand payment and all about debt collection here it is linked directly to recupero crediti "credit recovery" (a more genteel term for debt collection). The second reason is that the word "liquidabilità" is generally used in Italian for cash flow requirements in general, rather than esigibilità.

  -> Thanks for the intellectual honesty Dominic, I find it always pays dividends. Translating the financial reports of banks I've translated so much on liquidity and credit recovery during the credit crunch that I have a fairly clear vision of the concepts.

Assuming you meant "esigibilità dei crediti" as in the context sentence.
"esigibilità" essentially means "collectability", but the term that appears to be used more often is "liquidity" i.e. the possibility of collecting them and converting them into liquid assets or cash.

I have to admit I had a lingering doubt about the difference between "collectibility" and "liquidity" when I posted my answer last night. Anyway, having had a chance to do a little more research I've found the reference below, which provides the following clarification of the difference between collectibility and liquidity and supports Jim's answer:
"quality (collectibility) of receivables and their liquidity (nearness to cash collection)."
