Explanation: cangiare means cambiare,mutare, specificamente riferito ai colori. If sth is 'cangiante' it means 'che cambia di colore con il variare dell'incidenza della luce' (Devoto-Oli Le Monnier Italian Dictionary). I don't know if there's a specific word in English as the Italian 'cangiare', general E dictionary just give 'change', maybe you could render the meaning adding sth like 'changes colour' or finer ' changes nuance' - not an expert in colour then, maybe you can do better than me for that part, but i hope i was of some help.
