it's the little coupon you have to cut out of a box (cereals, pasta,..) and collect a certain amount of them to be able to ask for a prize (e.g., 200 "prove d'acquisto" for a new set of frying pans...)

Explanation:
In my experience these little tokens on the side of cereal or biscuit boxes or wrappers are always called tokens. (Proof of purchase on its own is very general and could cover anything from till receipts to credit card statements).
