Does anybody have a good translation to offer?

Explanation:
In this context "si" means così. However, an accent is missed, should have been written sì. And it is not a shortcut, this is old Italian. :)
"Cara" has the meaning of important, precious, something one has to care a lot about.
"Rifiuta" has not the meaning of rejecting life but of giving it, being ready to die in order to defend it, it means to renounce to live a life without freedom.

Hence, the sentence has to be read this way: sta cercando la libertà, la quale è così preziosa come sa chi rinuncia alla vita per essa.

My suggestion:
... is seeking for freedom,
which is so precious, as knows
who renounces the life for it...

Asker: Hello EleoE, many thanks for your answer. That's very helpful. I've actually found this translation in Wikipedia “He goes seeking liberty, which is so dear, as he knows who for it renounces life.…”.

Asker: So very close to your translation. I'm going to have to go with this as it is only for a marketing text and I have to deliver now..
