the client's suggestion isn't going to work, but the use of 'equipe' suggests they would welcome a buzzword like 'team' to describe their 'staff organizzativi', and if they work on conferences then the collocation of the word 'organizer' with 'conference' should work well

Asker: Oliver is good at this - I will say proven experience of its teamS of organisers or rather organising teams as there could be many teams and we are talking about what a city has to offer as a whole. Would never use "equipe"!

In answer to your question, I imagine it does sound strange :-)
But I assure you that "organizing staff" are indeed the staff in charge of organizing.
