Italian term or phrase: sulle arele
L’ultimo passaggio avviene con le uve surmaturate in piante, vendemmiate praticamente a novembre, e le stesse subiscono anche un ulteriore appassimento **sulle arele** prima di venir pigiate.

I understand that this is a drying process, but what exactly does "sulle arele" mean?

Tradizionalmente un tempo i graticci erano fatti con canne sottili, oggi con rete metallica dalle maglie più o meno fitte (arèle), dove avviene l’appassimento che riduce di circa un terzo il peso delle uve.
