Permette di ottenere vini bianchi sia da uve bianche sia da uve colorate sottoponendo a fermentazione solo il succo dell’uva, che nella maggior parte dei casi è incolore.
Le principali fasi della vinificazione in bianco sono:
– vendemmia;
– trasporto dell’uva;
– pigiatura con eventuale diraspatura;
– separazione del mosto mediante sgrondo e pressatura;
– illimpidimento del mosto;
– fermentazione;
– conservazione.

agree  xxxMr Murray (meets criteria): Something like that - but more like 'fermentation without maceration' - the skins can be present during some parts of the process, but the grapes (or better the skins) aren't crushed or destemmed. The grapes are pressed directly.
