In the previous sentence, the writer says that destemming of grapes prior to crushing is preferable:
"L'eccezione non tanto rara può essere rappresentata da uve colpite da "botrite" in cui la pressatura di uva intera o comunque in presenza del raspo e dei suoi tannini può fornire una prima difesa naturale contro gli effetti del ***pool enzimatico fungino***."
The closest I've come to a solution is "enzymatic pool", but havent' found this together with fungal/fungus/fungin... Anybody know the term?

I don't think it so important to put the "pool" in ans the "fungal" - I think it just means "alll the fungal enzymes that'll be there"
