Italian term or phrase: ceppo/ceppi
According to Giles Watsona (www.watson.it) ceppo usually refers to plant/vine/trunk, but I can't see how that fits here. See particularly "ceppi di lievito" below:

"Si è passati da una prima fase in cui i lieviti servivano per avere una certa sicurezza sulla velocità e sul completamento della fermentazione a una seconda in cui la scelta del **ceppo** diventa fondamentale per la caratterizzazione del prodotto.
Pur con un notevole aumento dei **ceppi** di lievito offerti dal mercato siamo comunque ancora lontani da quella che dovrebbe essere la terza fase: l'utilizzo dei ceppi selezionati direttamente dalle uve di quella zona e quindi adattati all'ambiente di produzione."

for microorganisms, the ceppo is the strain (i.e. the specific type of yeast used, in this case to make wine). It appears that the type of strain some how modifies the final outcome of the wine.

Asker: The only thing I don't understand is how the grapes can select the yeast strain, or am I losing it completely?
