"La maturazione in barrique nuovi d’Allier per 20 mesi, massa per 8 mesi e affinamento in bottiglia per 15 mesi"

Again, I know what it means, but I cannot figure out how to translate it "period of rest" would not render the whole meaning of the procedure...
