Il primo, definito dalla DOP "latte intero", � un formaggio da tavola a pasta bianca, di sapore dolce, pronto al consumo dopo tre mesi dalla lavorazione; il secondo (fatto con latte scremato), definito "d'allevo" , dopo sei mesi di stagionatura ha occhiatura pi� marcata e consistenza pi� adatta alla scaglia, di sapore pi� intenso e tendente al piccante.

"Description: L'appellation d'origine protégée «Asiago» est réservée au fromage à pâte semi-cuite produit exclusivement à partir de lait de vache obtenu conformément au cahier des charges, dont on distingue deux types différents, l'Asiago pressato (frais) et l'Asiago d'allevo (affiné)."
