d'après la phrase - et mes souvenirs de ski - je pencherais pour "rainure", mais je ne suis pas (plus!) une pro ;-)

"M. Jean-Luc Danel nous apprend ensuite le procédé de fabrication des skis. Le bois utilisé est le Frêne, La planche est allégée à l'avant et à l'arrière, au milieu le ski reste épais afin de mettre la fixation. Une rainure est creusée sous le ski pour l'aider à aller bien droit."
