Lachsschinken ist zwar eigentlich vom Schwein, siehe http://de.wikipedia.org/wiki/Lachsschinken ..., aber da das anscheinend genauso hergestellt wird (gepökelt und leicht geräuchert) und vermutlich noch aus dem vergleichbar selben Stück, denn "controfiletto" ist kein Filet, sondern das Entrecôte bzw. die Mittelrippe ... und Lachsschinken wird laut Wikipedia aus dem zentralen Kotelettstück hergestellt ... würde ich das vielleicht so schreiben ...
