I diversi tipi di lavorazione originano un prodotto: fresco, stagionato, cotto al forno, affumicato, salato, dolce, piccante. E’ prodotta, da giugno a settembre a ***mezz’alpe*** e da luglio a fine agosto in alpeggio. Durante tutto l’arco dell’anno la produzione di ricotta locale è garantita dalle latterie di valle, i caseifici, le latterie turnarie ed i privati.

<br>Auszug: Man unterscheidet in der Dreistufenwirtschaft den Niederleger (die unteren Almen, Maiensäss oder Unterstafel) und Oberleger (Hochalm) oder Oberstafel. Erstere ist die Alm der Montanzone, meist zwischen 1300 und 1500 Meter, die als Viehweide für den Früh- und Spätsommer brauchbar ist, zweitere die Hochweide der Subalpinzone über etwa 1500 Meter, die nur im Hochsommer begrast wird. Nach dem Abweiden der Hochalm belegt man nochmal einige Wochen die Niederleger, wo man besser vor frühen Wintereinbrüchen geschützt ist.
