Well, that's the general term. In the sentence you have, it seems to be talking about the curtaining for the entire stage, which means:

back tabs (at the back of the stage - but not backstage)
legs (curtains which create the wings)
borders (which hide things like lighting and scenery battens)
and possibly the house curtain (or grand curtain - Am. Eng.).

A lot depends on the context. Is it, for example, a technical rider? Or is it, for example, a plan for rennovation. If it's the latter, there may well be more - you might want to check with the client :-)

I should have added that if it's just a rider, then, IMHO, stage curtaining should be enough :-)

Well, since it's a list of technical requirements, I would probably write:
'. . . all stage curtaining/drapes (back tabs, legs, borders etc.)'
