En la fermentación ocurre la transformación de los azucares en bioethanol. Para esto se utiliza una levadura especial para fermentación alcohólica, la Saccharomyces uvarum. En XXX se ha instalado una fermentación por baches tipo batelada. El mosto es mezclado con lechada de levaduras en las dornas de fermentación de 700 m3 de capacidad.

Explanation:
The batelada is the actual reactor vessel (Portugese). Baches I suggest is a typo for "batches" (English) - for example, "Os critérios de seleção para determinação de lote podem ser usados para definir e limitar o número de possíveis batches que são permitidos para a produção."

Explanation:
You have to take the whole phrase "fermentación por baches tipo batelada".
Now that it has been confirmed that "batelada" is Portuguese and means batch, it seems evident that the phrase is literally saying the same thing twice: "batch-type batch fermentation".

Not that "bache" is being used here in any of its normal senses in Spanish. The usual term for batch fermentation is "fermentación por lotes". For example:
"Una fermentación por lotes (Batch) o discontinua puede ser considerada como un "sistema cerrado"."

However, it is clear enough that "bache" means "batch" here, and there is some confirmation that this usage exists, at least in Colombia:

Here is a blog entry from a Colombian:

But then "fermentación tipo batelada" also seems to mean batch fermentation. So I can only assume that the sense of "tipo batelada" is batch processing done in the particular way it is practised in Brazil, where it is called "fermentação em batelada" (see http://pt.wikipedia.org/wiki/Fermentação_descontínua ). "Batelada" is, after all, a foreign word in Spanish, so it seems reasonable to use the same foreign word in English.
