Trata-se de medalhões de carne de peru, mas aqui nao importa, pois "the batch" appears to be the right term.

Boa tarde, Oleg! I cannot post any suggested answer because I am not a "Proz.com member", but my suggestion is as follows.

Thinking of "medalhões de carne" as "beef patties" (as defined below), perhaps "batch of ground beef" would make some sense.

Cursei Hotel & Restaurant Management há muiiiiito tempo, ainda gosto do assunto (especialmente F&B), mas para os meus poucos conhecimentos, a palavra "massada" não significa absolutamente nada em cozinha. "Massa" sim, mas "massada", nada...
