According to my Aurelio dictionary, estereotomia (note spelling) is the "arte de dividir e cortar com rigor os materiais de construção." In this case, we're talking about the floors (pavimentos) of the building.
So this is just a hint....not the answer you're looking for. All the nearby entries start with "stereo" in English. Odd

|Thank you for setting me off in the right direction. Of course, estereotomia was what was meant. With your help, I've concluded that what it means here is a plan to show how the (presumably) marble flooring materials will be cut and laid to a pattern.|

I think it could be one of two things:
1.) to place expansion joint cuts in the pavement to avoid cracks. For example sidewalks and driveways have expansion joints at a certain distance apart or they can be cut afterwards to prevent ugly cracks.
2.) To know where and how to cut a pavement for decorative purposes to simulate old stone or bricks, etc.
