Indice de deformare - reprezintã gradul de lãþire al unei sfere de gluten într-un anumit timp ºi în anumite condiþii. Este o mãsurã a calitãþii glutenului.
Astfel:
3 - 13 mm - calitate superioarã
< 3 mm - gluten puternic, neelastic
> 18 mm - gluten lipicios, filant.
