Нашла для него теплую барашковую шапку и старый сукман из монастырского сукна.

Any particular type of cloth or just a rough simple cloth such as a habit would be made from?

Explanation:
I think your guess is right, Deborah. This cloth must be simple and inexpensive (wealthy people back then could afford fancy quality fabrics from Europe). Монастырское only means that it was made by nuns in a convent (I don't know if monks in monasteries were involved, probably not), not any particular kind of cloth.

agree  Alexandra Taggart: Of course, it was made by nuns the weavers. It is good for any climatic condition as well - one particular quality of natural materials it was made of: it feels warm in the cold in it and it doesn't feel too hot in the warm.
