buying the orchard before it will be cut down


Explanation:
The life span of a fruit tree is rather short, they stop to produce much when old, and it is a standard practice to cut old trees down in, say, 30 years before planting a new orchard. Cherry trees are planted in the place of apple trees, or peach trees in the place of the pears in order to retain nutrients for a different type: different types of trees do need different nutrients. Of course, not all trees can be of the same age, some can be still fruiting and the whole process of cutting the orchard down normally takes a few years. Their wood is valuable and used for smoking meat, fish and cheese.
So, that, which they had bought - were the trees. They were harvesting what they could for some years, they were cutting dieing trees down meanwhile and selling tree trunks to the smokehouse. The land where the orchard grew one time, most likely, was submitted for rent, someone else had started planting and growing young trees.
