I agree with Marian about "sugar mill." "Sugar cane mill" sounds like an awkward translation. I've had a lot of experience with agricultural texts, and I've never heard "sugar cane mill."
if you really need to distinguish between the old and the new, you could always say "modern sugar mill" for the "central". I really don't think you want to use "sugar cane mill", as "sugar mill" is exponentially more common...
From reading your comments to Yaotl´s response, I think that you might want to change your term for "ingenio". I understand that "ingenio" refers to the machine, whereas the "central" is the whole facility or even the company

Asker: The thing is, I need to find some way to distinguish between the earlier "ingenio" of the 19th century and the "central" of the 20th century. And they're both "sugar cane mills" as far as I can tell!
