Basically, I'd stick the (in my view unnecessary) organ somewhere out of sight (like the bin!)...

Without capitals is better, since it appears not to be a proper name per se:
So, (although I do dislike "organ") something along these lines:
"... the entity would henceforth be both an organ of collective farmers' cooperation and representation in dealings with public institutions."

agree  Muriel Vasconcellos: I agree that "organo" is subsumed by the noun 'Cooperative'
