Well, the translation will vary depending on the product. If it was carrots, you might say topping and tailing; if it was livestock or fish, it could be deheading.

IATE dictionary, which was started as an aid for customs officers working in a multilingual environment, has variously "to top", "trimming-out" or "trimming", and "to remove the head", referring to different products. The one which seems to suit them all is "trimming".
