Explanation:
"Rose of roses, flower of flowers, woman among women, (lady of ladies), gentleman of gentlemen". This is the literal translation, it would mean the best among them. However, most of the poem refers to a woman, whereas the last bit talks of men, I believe it is a missprint, and it should be "lady among ladies", as I put in parenthesis.

Also, this could only be old Spanish (Galaico-Portuguese), or Portuguese.
