depends on where you are...
In Cuba, "las vegas" are tobacco plantations (and a "veguero" is a tobacco planter or farmer, and also a fine cigar made from a single rolled leaf);
In Chile, they're areas of damp or swampy terrain (with the adjective "vegoso" meaning "damp, humid, or swampy," with reference to land or soil).
In Spain itself, as mentioned above, they are fertile lowlands.
None of which, of course, explains why the name was given to that wide spot in the highway in the middle of the southern Nevada desert...!
