Spanish term or phrase: presa / secreto
Estoy traduciendo el menú de un restaurante y constantemente me encuentro con estos dos términos.
He estado buscando por internet y en foros. He conseguido averiguar que la ***presa*** y el ***secreto*** son piezas especiales de carne de cerdo, especialmente con cerdo ibérico.

La ***presa*** se encuentra entre la parte trasera del cuello y el principio de la espalda, antes de la paletilla, y el ***secreto*** está en la parte baja del costado. En ambos casos unas piezas muy pequeñas, con mucha grasa infiltrada.

¿Alguna idea de a qué correspondería en inglés?

"For meat-lovers, ox-tail (rabo de toro), wild boar (jabalí), rabbit (conejo) and venison (venado) feature strongly here, as well as chicken, turkey and various cuts of pork, such as lomo, presa and secreto. A great opportunity to sample the local gastronomy is in November, when the “Ruta de la Tapa” (tapas route) takes place in Arcos de la Frontera."
