Thanks, Ian - I think this makes most sense in the context, as we're commenting on the age of the olive trees. Thank you all for the suggestions!

that one says it lightly

Explanation:
It is a use with a bit of ironic intention. He says 200 years! and that is not anything trivial. It is a tremendous achievement or reality.

easier said than done

Explanation:
Or you could also said "easy to say, difficult to achieve". I think it is necessary to paraphrase here.

Olive trees can live for thousands of years. Just as old vines make better wine, maybe old trees make better oil?

which is a very long time/two centuries

Explanation:
It takes a short time to say "200 years old" but bear in mind is a VERY long time. That is the meaning. If it was something you do the equivalent would be "easier said than done" but I do not think it applies here.

- (which is) not exactly the blink of an eye!

Explanation:
I agree with Cgowar; I think the meaning isn't exactly "easier said than done", even though that's what many online dictionairies give, i.e.:
MODISMOS eso se dice muy pronto that's easier said than done
http://dictionary.reverso.net/spanish-english/decir

The English meaning of that idiom:

Cliché said of a task that is easier to talk about than to do. Yes, we must find a cure for cancer, but it's easier said than done. Finding a good job is easier said than done.
http://idioms.thefreedictionary.com/easier said than done

Which doesn't quite fit with the RAE definition of the Spanish:
- que se dice pronto.
expr. coloq. U. para ponderar la magnitud o naturaleza de algo que sorprende por su carácter inusitado. Había 5000 personas en la plaza, que se dice pronto
- que ya es ~.
1. expr. coloq. que se dice pronto. Se ha casado cuatro veces, que ya es decir

Using"the blink (also possible "wink") of an eye" keeps the idiomatic tone, yet the negative emphasises that it is precisely the OPPOSITE of a short time.
