Not uncommon to find them called "oricios" btw - the name in Asturias.

Cherry Vinaigrette sound tastier than sea urchin, which I tried once and found revolting. Maybe a vinaigrette is the only thing that'd make them palatable though...

Am not disagreeing or agreeing yet, but "cherry vinaigrette" gets 37,700 googlewhacks and "sea urchin vinaigrette" only gets about 3200 ...

Although sea urchin probably goes better with eels (another suposed delicacy I can't abide, apart from the all i pebre sauce served with eel in Valencia, vaguely reminsicent of curry...)
