Hi,
I'm translating some recipes and have come across this term - "patatas cortadas en encontrada" - anyone have any idea what it could possibly mean? I've looked everywhere and can't seem to find any kind of explanation - the context is below:
Infusionamos la piel de bacalao en el caldo de cocido, sacamos la piel y reservamos el caldo. Doramos los 2 dientes de ajos, y añadimos la cebolla y el puerro para rehogar el conjunto. Posteriormente añadimos las patatas cortadas en encontrada, el bacalao, la piel de bacalao (que previamente hemos infusionado en el caldo de cocido), el laurel, el boletus.

Yes, it's Spanish for Spain, a recipe for a chef to be published in a gastronomy magazine published here in Spain. And yes, I'm getting hungry too, I sense a potato-based dish is on the cards for dinner tonight!
It drives me nuts that half of the fruit or vegetable gets wasted using a knife. I've convinced my husband and a cousin to use peelers, but I notice that even they slip nostalgically back to the knife technique now and then. Old habits are hard to break! I love my "good grips" peeler.
It's a technique that is more than just roughly slicing because you don't slice all the way through as you "snap" the last bit to give the rough edge which usually comes away during cooking, thickening the dish. It's making me feel hungry!
Maybe 'roughly slice the potatoes into ...' ? It's funny you should say that about potato peelers, Jenni, because my Brazilian boyfriend peels potatoes with a knife and I am terribly slow without a peeler! Everytime I go back to Ireland from Brazil I forget to buy a peeler. Next time!!!
I think that Isamar has this (so I'm taking my response off the board), but I think that you've got to add more description if anyone one is to understand, along the lines of potatoes that have been . . . and following her description.
Interesting, Lindsay. Members of my Spanish family cut a lot of things in what could almost be called chips (they seems to have an allergy to chopping boards and peelers and do almost everything "knife in hand". I'm trying to thinking about how to describe that process gracefully in English! "Hand slice" might work, but there's no "snap" to it.

I think this slicing and breaking technique sounds about right. Never heard of this before myself!
If they are like "patatas cachadas" then you cut the potato, snapping off the last bit of each chunk so that that bit is a little ragged and usually disintegrates in the sauce, thickening it. I found this link for them http://www.tuteloguisas.com/index.php/cachar-patatas

Tell me about it, I'm Irish as well and thought I'd never get stumped by a potato question! That looks like it fits the context, I remember having to translate this Spanish "half slice, half break" potato technique before and ended up explaining it in a footnote, I know a lot of people use this technique for potatoes here but I'd never seen it before I moved to Madrid... cheers!
Patatas Quebradas ó encontradas: Mas que un corte determinado es una forma de cortar las patatas para que produzca una mayor salida de los almidones y, de esta manera, conseguir que el caldo de cocción quede ligeramente espesado. La formula consiste en comenzar a cortar la patatas (general mente con una puntilla) y antes de terminar el citado corte tronchar el trozo sin cortar. La parte disforme tronchada se disolverá con más rapidez por efecto de la ebullición, actuando sus partículas como espesante.
Not quite sure what the English term would be though. Being Irish, I should know my potatoes better!
