Hi,

I'm translating some recipes and have come across this term - "patatas cortadas en encontrada" - anyone have any idea what it could possibly mean? I've looked everywhere and can't seem to find any kind of explanation - the context is below:

Infusionamos la piel de bacalao en el caldo de cocido, sacamos la piel y reservamos el caldo. Doramos los 2 dientes de ajos, y añadimos la cebolla y el puerro para rehogar el conjunto. Posteriormente añadimos las patatas cortadas en encontrada, el bacalao, la piel de bacalao (que previamente hemos infusionado en el caldo de cocido), el laurel, el boletus.

Explanation:
I found this in a recipe: Pelamos y cortamos las patatas "encontradas", es decir, en trozos que se van arrancando con el cuchillo, para que suelten luego más fécula al guiso y lo espese.
